Actually, if I'm reading this right, regardless of the country of origin,
they are different cuts of meat. Lamb loin chops (which I buy) are much
larger than lamb shoulder chops. The shoulder chops are much more
expensive, simply because a lamb only has 2 shoulders. They can get
multiple chops off the lamb loin.
