Default roasted vegetables

The way I roast vegetables is to rub them with oil, add salt, pepper and herbs, place them in a single layer in a heavy pan and heat them on the stove.. When the handle of the pan gets hot stir them and place then in a 400F oven to finish off. They still need occasional stirring or the side in contact with the pan may burn.
