From the National Foundation for Celiac Awareness: "An estimated
1 in 133 Americans, or about 1% of the population, has celiac
disease." Probably much the same in Canada.
Actually that's less than 1%. Not really a lot. Certainly not
enough to warrant the change in business practices.
"Gluten" intolerance is most likely caused by Fodmaps.
