This looks pretty much like the standard recipe
that most people use when they want buttermilk pancakes.

The way I was taught years and years ago when it's time to
flip them is wait until you start seeing bubbles appear
the uncooked side; usually those bubbles will also burst.
No having to peek to see if they are brown and needing to
be turned. Works every time for me.
