Simple high-fiber meals?

You're looking for an all in one dish instead of three items on the
plate?
I don't plan meals in terms of fiber, but I do make a habit of serving
a vegetable or at least a tossed green salad. Nothing complicated -
fancy lettuce leaves from a bag and homemade lemon vinaigrette.
Like I implied, I'm not big on all in one meals - but here are some
ideas I've tried and liked
Chicken Chili with Black Beans and Corn
Chicken Piccata with Artichokes, Mushrooms and Heavy Cream
Roasted Corn Chowder with Chicken, Lime and Cilantro
Rosemary Lemon Spaghetti Squash (with chicken)
Vegetarian Japchae (Stir Fried Glass Noodles with Vegetables)
Once you master a piccata sauce, you can use it for more than chicken.
My current favorite way to use it is with fish and I just saw pork
piccata yesterday. Of course, you need to think about what else to
put on the plate. I like to serve plain couscous (it's brain dead
easy to make) and a green vegetable with it.
