After being opened about a week canned coconut milk will be just fine in the
fridge but if you intend to store it much longer transfer it into a glass
jar... then I'd not store it more than about three months... naturally the
sooner you use it the better. Here it wouldn't last long enough to spoil... as
I have pineapple juice and rum it would be consumed within the day. Hey, I
ain't any lush... I meant I would bake a pina colada rum raisin cake cake.
