I think he does it because that's the hand that gabs the jars and
anything else he wants to stay clean. If you've ever watched chefs
demonstrate how to coat chicken with that flour, egg, flour method -
they recommend using the non-dominate hand for the dirty and the
dominate hand for the clean part. It's just good kitchen sense.
