So, I've got this huge number of sweet potatoes to peel. They fill a
20 gallon can. Many of these are "canners", meaning they're large,
crooked, and hard to peel.
Is there a simple way to remove the peel without following the
traditional GI method of sitting half a day with a peeler and scraping off
the skin?
