Default tert's test chicken

I had a bunch of drumsticks that needed to be cooked ... 10 or so.
The only available method was cooktop since the oven bake element decided
to blow and I haven't replaced it yet. And it was raining so I couldn't
bbq them.

So I heated a large skillet, added some oil and bacon drippings, and set
to browning the drumsticks. Then I added some chopped onions, green
pepper, and minced ginger and garlic. A little butter got sneaked in
there somehow too. After a time I added a can of diced tomatoes, squirted
some lemon juice in there, and sprinkled some dried thyme, salt & p --
then let it simmer covered for an hour or so. Served with brown rice.

Verdict: a little boring, so when I packed leftovers for lunch this
morning I sprinkled in a little dried rosemary and included a lemon
wedge. It was a little better but nothing special. One nice thing is
with all those bones, the sauce thickened up unexpectedly.

This is good comfort food, not challenging to make , and the whole family
enjoyed it.
