A vegetarian soup can contain mushrooms rather than meat. There are
infinite vegetarian soups that are hearty. I often make mushroom
barley soup with no meat, I use an assortment of dehy 'shrooms and
they have fantastic flavor and actually have a meaty texture... a soup
of asparagus, mushrooms, and tofu can be hearty too. Wild rice soups
need no meat. I prepare an oriental style vegetarian soup at least
once a week, with many veggies, potent seasonings, and well thickened
with corn starch it's very hearty and filling. Soups don't need to
contain animal protein. I very often make egg drop soups but I
suppose eggs are animal protein. Even minestrone with no meat but
with beans and pasta is very hearty. This is a very hearty flavorful
soup that contains no meat and if I omitted the egg it wouldn't be
missed, it contains mushrooms, celery, onions, garlic, bok choy, and
carrots, it's highly seasoned with soy sauce, fresh ginger, fresh
milled white pepper, and toasted sesame seed oil... so thick a spoon
stands up... add a good pinch of MSG and people will swear it's meat

One of my favorite soups is a compote of mixed dried fruit with wine,
citrus, and cinnamon, very satisfying hot or cold.
