I think they use anetto to give cheese that yellow/orange color. same
as they do margerine... at one time cheese was colored to discern it
from each cheese makers', each had a secret formula for their final
product that could be IDed with color chips same as paint chips. Most
foods we eat are artificially colored, if not they'd all be shades of
gray.
