You're thinking of the rind. Like from Parmesan. The ends are what they
have at the deli counter. You know, the place where they slice meats and
cheeses to order? When they have just a little stub left, it gets chopped
into smaller pieces and put in a plastic tub and sold at a reduced price.
You never know what meats or cheeses might be in there. They are not
labeled as such. I'm not sure that you can even get these any more given
the current labeling laws. I used to buy them at Albertsons back in the
70's and 80's. At that point in time, the one near where I lived was the
only store around that actually had such a deli counter. At least in this
area. Not long after, most stores did get them.
