I wish I could get some brisket around here. For some reason, we don't
eat the stuff on this rock. The times that I have been able to get some,
I'd roast it in a slow oven. It comes out just wonderful. I'd have some
reservation about pickling meat in a brine unless I had too. That
doesn't seem like a very nice thing to do to a beautiful piece of meat.
