Cooking with White Zinfandel?

I've poached chicken breasts in white wine with a few sprigs of
tarragon. After removing the cooked chicken, I boiled down the liquid by
half and then thickened it with cream.
You can also use a few TBSPs on fish baked in foil or parchment.
