I'm fine with supermarket hamburger and I don't care if it's made from
meat scraps. That's what hamburger should be composed of. The meat I
buy at the grocery store is prepackaged, but it's exactly the same
texture as what I buy from a stand alone butcher or ground from a
roast I handed to the butcher. The biggest difference is that the
butcher doesn't get the opportunity to confuse me by asking how many
times I want him to put it through the grinder.
What I won't buy are those cryovac-packages of ground meat that come
from somewhere outside the store (complete with a brand name). The
texture of that ground meat isn't what real ground meat should be -
it's probably where they use the now renamed pink slime.
As far as 30% fat - that's a NO. 15% is ideal for me.
