Ed's pork chop at that binary site and I said I'd post pictures here
next I cooked pork chops. I also often buy the family sized packages
of shoulder pork chops, they are very inexpensive, sometimes 89¢/lb. I
trim the meaty parts out, coat with seasoned flour and fry them
quickly like cutlets, they are fattier so are more tender than loin
chops. I trim out the larger sections of fat for feeding crows. The
bony parts are braised in tomato pasta sauce.
