Salmon Dill loaf
15 oz. canned salmon
6 oz. drained, canned, water chestnuts, diced
1 egg, beaten
1/2 c. diced celery
1/2 c. diced onion
1/3 c. plus 2 tsp. ketchup
1/4 tsp. dried dill (or 1 tsp. fresh)
1/4 tsp. pepper
1/4 tsp. Worcestershire sauce
4 lemon or lime wedges
Combine all ingredients except lemon or lime. Spray pan with non-stick
cooking spray. Turn salmon mix into pan, shape into loaf. Bake 35-45
minutes at 350 degrees. Serve warm or let cool. Slice, serve with lemon or
lime wedges. 4 servings. Each serving: 4 protein, 1/2 bread, 1/2
vegetable exchanges. 25 optional calories.

1 lb. can salmon
1/2 c. milk
1 1/2 c. soft bread crumbs
4 tbsp. melted butter
3 egg yolks, lightly beaten
1 tbsp. lemon juice
2 tbsp. minced onion
1/2 c. minced green pepper
1/2 c. shredded raw carrot
1/2 tsp. salt
1/2 tsp. pepper
3 egg whites, stiffly beaten
2 eggs, hard cooked
Drain liquid from can of salmon into mixing bowl. Add milk, bread crumbs
and melted butter. Stir to combine and let stand for 5 minutes. Flake and
add salmon, then egg yolks, lemon juice, onion, green pepper, carrot, salt
and pepper. Stir to combine ingredients. Fold in egg whites. Line bottom
of 8 inch cake pan with foil and butter foil generously. Turn salmon
mixture into pan and smooth with spatula. Bake at 350 degrees for 40
minutes. Unmold on warm serving platter and remove foil. Sprinkle with
hard cooked eggs, pressed through a sieve. Serve hot with mushroom or cream
sauce. Serves 4.
Finally;
1 egg
1/2 c. milk
4-6 crackers
1 can salmon
Parsley, etc.
Beat egg. Add milk to egg. Add crackers, parsley and deboned salmon.
Combine and pour into a greased casserole dish. Bake at 350 degrees for
45-50 minutes (until center is set).
I think these will give you the basic idea.
Canned salmon, egg or eggs some bread, crackers, or the like and about
anything else you fancy.
