I can appreciate your concerns about fat. It also has a whole lot of salt. OTOH, the salt is what allows a single slice of Spam to be placed on top of a ball of rice and create an entire meal in a highly compact package. As far as any gristle goes, I've never seen that in Spam, since the meat is totally mashed into a fine, uniform, paste that bears absolutely no resemblance to meat at all. You may be mixing Spam up with luncheon meat.
