My mother used to make soft-boiled eggs for us when we were sick.
Delicious and easy to digest. However, she did not serve them in the
shell. She would use a spoon to remove the eggs from the shell and
gently chop them for us.

Served in the shell looks elegant, but I do agree with poached eggs. I
love a poached egg on a toasted English muffin.
