Open faced? In my world, that is a variation of a Cheese Dream, though
they were usually cheddar and bacon. A variation would be Cheddar and
leftover asparagus.

Lunch today was more like your version, except two slices of whole
grain. I had slices of a 3 year old cheddar, thinly sliced onion and
sliced tomato. I have to say I was really disappointed with the tomato
because it was quite bland.

FWIW.... I did it with butter today. I can't say that it was better
than olive oil. However, my more frequent version of a grilled cheese
is the one with a mixture of Cheddar and Feta with sun dried tomato, and
the olive oil enhances that one.
