Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 chicken breast halves without skin -- without bones
1/4 cup dark brown sugar -- firmly packed
1/4 cup Dijon mustard
1/4 cup bourbon
2 green onions -- thinly sliced
1 teaspoon salt
1 teaspoon worcestershire sauce
1 tblsp butter
1 tblsp vegetable oil
Place chicken between 2 sheets of waxed paper; pound to 1/4Inch thickness.
Place chicken in a shallow baking dish. Combine brown sugar, mustard,
bourbon, green onions, salt & worcestershire sauce; stirring well. Brush
mixture over chicken on both sides and marinate one hour in the
refridgerator, covered.
Remove chicken from marinade, reserving marinade. Combine oil in large
skillet and place over medium-high heat. Saute chicken 3-4 minutes on each
side, until done. Remove chicken to a serving platter and keep warm.
Drain and discard pan drippings. Add reserve marinade to a skillet; bring to
a boil, stirring constantly. Pour sauce over chicken.
