I hear you, my kitchen is similar. Anywhere upper cabinets could meet
is some sort of a space. I have two regular doors, French doors, a
huge window, a breakfast nook and an old fashioned furnace flu that I
figure the next owners will remove when they gut the kitchen and
completely reconfigure it to make a more logical cooking space. In
the mean time, I've learned how to cook in the layout I have (without
leaving a water drip trail on the floor) and don't care anymore.
