Anyone actually cooking today?
Jebus, one of my favorite things to do with cooked chicken is to make a chicken and
rice casserole...can be frozen and heated later. I make a "white" sauce using corn
starch and chicken stock, cook rice with stock instead of water, or half and half stock
and water; add some diced onion and celery, plus seasonings and buttered bread
or Panko crumbs on top. It is really good.
