I've never used an electric pressure cooker because my stovetop Fagor does
the job for me, but the downside I've heard about several times is that the
electrics don't cook at the same high pressure as a stovetop. High
pressure on a stovetop model is right around 15 psi, while the electrics
only seem to generate around 11 psi on high. How much difference does this
make? Don't know. But some people seem to think it's an issue.
