The only taco I was aware of was Taco Bell. Yes, there was at least one
Taco Bell "restaurant" in Vista, CA in 1967. They never had a problem
with leaving off the lettuce. Mom knew the school cafeteria wouldn't
customize a couple of tacos for one kid in the lunch line.

I'm sure it came in industrial sized cans. They weren't making tomato
sauce from scratch in a school kitchen.
