Depends on what you are used to and how you cook them. Russets not
overcooked work well. Sometimes though I like a comfort food from my
childhood. Mom would cube russets up all pretty then over cook them so
we had 'mashed potato salad'. I actually liked it and do it
deliberately sometimes.
