Default Brunch, Lunch, whatever 7/15/17

The temps have dropped to a heat index of only 97F (from 107-110). I'm
catching up on baking.

Made the Pita's this morning, Apple Bread going now, and making more
'pizza' sauce on the stove top while home made sausage defrosts along
with some pulled BBQ home made pork.

Stromboli dough when the Apple bread finishes is the plan but may do
that tomorrow. I've done similar before but only added it to my recipe
software today.

The Apple Bread is a new one but the ball has formed very well. For a
rae time, I'm letting the machine do the baking as less heat added to
the house.

Title: Xxcarol's Pita Bread
Categories: Breadmaker, Xxcarol
Yield: 12 Servings

1 c Water
3 tb Olive oil
3 c Bread flour
1 1/2 ts Salt
1 ts Sugar
1 tb Active dry yeast

A bread machine Pita bread? Who'd have thunk of that! Snicker, it
works!

Add the ingredients in the order listed. Optionally you can use a
slightly heaped TB of Honey powder for the sugar. Also if you want,
1/4 ts of mustard powder or a little ground black pepper seasoning
can be a nice touch. Set the machine in Dough mode and let it do
it's thing.

Remove dough and punch down then divide to 12 portions and roll those
to a ball and let rest with a damp towel for 10 minutes.

Roll the ball out to a 6-7 inch round on a floured surface and place
on a greased baking sheet then bake in a pre-heated oven at 450F for
2 minutes then flip with a large spatula or 'pancake flipper' and 2
minutes more.

These are normally done 4-6 at a time due to baking sheets and
flipping times I have here.

Title: Xxcarol's sausage stromboli
Categories: Xxcarol, Breadmaker, Sausage
Yield: 6 Servings

1 c Water
2 tb Olive oil
2 cl Garlic, minced
3 c Bread flour
2 ts Italian seasoning
3/4 ts Salt
1 ts Yeast
12 oz Sausage
2 c Fresh mushrooms
1 c Chopped onion
1 c Pizza sauce
1 c Shredded mozzarella

We making a meata pie!

Add the first 7 ingredients to a bread machine on dough mode. This
wil take about 1.5 hours. During that time, cook the mushrooms,
sausage, onions until done and drain off the fat then add the pizza
or 'red sauce'.

When the dough is ready, split in 1/2 and roll out to about 11 inches.
Fill each 1/2 with your meat mixture and cheese then moisten the
edges of the dough and fold over, then mash edges with a fork for a
good seal.

Cut slits in the top for steam to escape then bake on a baking sheet
(with a little lip in case of leaks), at 425F for 30 minutes.

Title: Xxcarol's Apple Tree Bread

Yield: 12 Servings

2/3 c Buttermilk
3/4 c Chopped fresh apples
1 ea Egg
2 tb Water
2 tb Butter
3 c Bread flour
2 tb Sugar
3/4 ts Salt
1/2 ts Cinnamon
1 ts Yeast

So what else do you call it when you walk out in your yard and pick an
apple? The ones here are a mix of Granny Smith and Golden Delicious.

This makes a 1.5lb loaf. This time I am letting the maching do it all
for me. Peel and slice the apples fairly small. Add all in the
order listed then set to a basic 1.5lb white.

Optional: Who doesnt like Apples and cheese? Leave out the cinnamon
and add up to 1/2c fine diced cheese.
