Before I plunk down the dollars (seemingly many dollars for a one trick
pony), what is the best free source of reliable info about sous vide
cooking?

My local library system doesn't have any books on "sous vide". Is there
a reliable, trustworthy source for a sous vide wannabe/beginner on the
interwebs?

I've never had a book and I've had my machine for years. The timing is
everything and I have a timing table. You can put whatever you want in the
bag
