I've seen wedges of russet potatoes in the mid-south (quarter fries)
battered and deep fried. A rare treat, and I sure wouldn't make them at

Up north where my parents grew up, they were called quarter fries but
they were roasted in the oven. Rubbed with oil, seasoned with salt (
pepper and roasted in a very hot oven.

I like potato chips when I make a hamburger. I like them *on* an
hamburger! That's really the only time I eat potato chips.
