The hallmark of Hawaiian style cooking has always been simplicity. The lack
of availability of certain food items required that recipes be simplified.
These guys were doing mashups of foods because they were exposed to the
foods of different cultures. Most people grew up eating canned meats because
of the lack of fresh meat and refrigeration. I suppose they could eat all
the fish and pigs they could catch.
