I often freeze meal portions of chicken and rice casserole, and rice/beef stuffed bell
peppers. Just make sure you have plenty of liquid or sauce in the dish, and it will
be fine. I usually thaw in the fridge and then heat up (for cooked meals), but they
can be heated from the frozen state.
