Joe Ortiz's book was one of the first books I bought on bread making.
His SD starter had cumin in it at the beginning. On a Julia Child
episode he maintains it is to attract the wild yeasts and bacteria. I
think it was another of those bits of folklore.
Still, he started me on the French rather than US style of SD.
