Toss carrots and potatoes in a little bit of oil, rub with hands to
make sure they are coated. The carrots and potatoes will get done and
are able to brown if you wish. Veggies don't seem to roast well
without a thin surface coating, carrots in particular (a trick I
learned a long time ago)
