My wife used to do a rolled lamb shoulder with a bunch of herbs. It was
delicious, but he had it so many times I tired of it. Now we stick to
legs. However, I had wonderful shoulder in a Chinese restaurant in San
Francisco when I was there a couple years ago. It was cut into thin
slices, dusted with some spices and maybe cornstarch and crispy fried.
It was amazing.
