Oh dur. If you want to make a mountain out of a molehill, here goes! I
planned to make several batches of the quiche for the freezer The gardener
and I had a talk about diet and food the other day. He is wanting to change
his diet and I agreed to help him with this, adding that I would have to
phase it in gradually so we could use up the food that I already have. I
think mostly I will eat the things he doesn't want. Such as wheat pasta and
white rice. He wouldn't get sick if he ate these things. He is just trying
to make strides as to what he feels a healthy diet is. And yes, this is
debatable but... I won't argue and I will try to accommodate.

He is often in a hurry when he leaves here. Has to get to a job or just
stopped by to swap out some tools or something. So he needs grab and go
foods. He has been mostly relying on pre-packaged stuff and breakfast
burritos from Costco. He has been having some issues that I won't get into
here. That's nobody's business but I think the change in diet will help.
Mostly I think he needs to eat more protein and fat.

I suggested the quiches because they fit those parameters and are far less
expensive to make than buying the frozen burritos. I knew I would be making
several batches, but wasn't entirely sure how many I would make. I used ham,
bacon, sausage, several different cheeses and several kinds of veggies. I
wound up making 4 different varieties.

I already planned to make the hominy casserole. Here it is, but I will not
be putting the breadcrumbs on top. He likes hominy and this fits the
parameters of how he wants to eat.

As you can see, it calls for the half and half. The quiches said to use half
and half or milk. I figured the extra fat would be a good thing. But then in
looking at the smaller containers, I quickly realized that it was far
cheaper to buy the larger one. Saved me from having to do math too.

So there you have it. And I will be making some chicken with the half and
half later. I will make the hominy tomorrow and where I go from there
remains to be seen. If I have more half and half left, I might make a
vanilla pudding and top it with peaches. He likes peaches.
