Likewise.

I used a French made commercial "mandoline". Those are strictly fer a
prep station, as they need to be "mastered" by a good prep-chef.

I'm trying yer method --cheese on top of Bechamel sauce-- no
andouille or onion. 1/4 as much cheese.
