That may actually be the safest way to do it.
By leaving the central nervous system intact,
you prevent leakage of cerbrospinal fluid
all over the rest of the meat, which may
reduce the chance of spreading prions
(infectious agent for transmissable spongiform
encephalopathy), should they be present.
