My friend from Texas sent me an enchilada recipe that was popular at his family's diner. It was enchilada filled with Velveeta cheese covered with a bland tomato sauce. It was poor folk food but quite popular with the locals. He also sent me some chiltepin peppers - not bland! About 7 seconds after the first taste, I was hooked - the peppers, not the enchilada.
