To each pound of pork add roughly this: Adjust to personal preference
tsp salt
tsp pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground fennel
1/4 tsp dried basil
1/3 tsp oregano

Optional is parsley, thyme, paprika, rosemary

Add a splash of wine to help mix it together. Let is stand for a while
for the flavors to blend together.
