If I had to guess, the USDA became involved in regulating what can be
called jam, jelly, or fruit preserves. Once Americans started seeing
those designations on labels at the grocery store, we starting using
greater precision in naming.

I guarantee that millions of American's don't know the difference.
They just by what they like.
