Chicken and rice pilaf
I winged it and made my own. Would have liked to have slivered almonds but
Walmart doesn't carry hem, so used sliced. Sautéed those in a little butter.
Set aside.
Used up some veggies that I had. One yellow onion, three carrots and three
ribs of celery, diced. Sautéed those in a little butter then added a
container of sliced Cremini mushrooms that I cut into smaller pieces
(Walmart markdown) and several handfuls of baby spinach. Added a bit of
chicken broth, salt, pepper, parsley and roasted garlic. Cooked all until
tender. Set aside.
Cut up three half chicken breasts (boneless skinless) into bite sized
pieces. Sautéed in a little butter and same seasonings as above. Set aside.
Sautéed 2 cups long grain brown rice in a little butter then added 4.5 cups
chicken broth/water. Didn't have quite enough broth so padded it out with
water, and more of the same seasonings as above.
Cooked the rice for 45 min. then mixed in the rest and heated through.
Mmm... Yum!
