I have learned not to make too many assumptions on ethnicity when it
comes to restaurants. The Hawaiian restaurant in our town was run by a
white guy and there were no Hawaiians involved in any way I knew of. My
son managed a brew pub that was franchise of a French chain. The
Canadian owners were Greek, and the kitchen staff we all Tamil.
