Restaurants give you a salad first so you have something to eat while
your meal is being cooked.

Mostly I eat it like you, but will sometimes eat some ahead while
finishing cooking the rest of the meal. In Italy it is often at the end
of the meal.

I have dessert later in the evening, usually about 8 PM.
