You remind me of something my mother has told me several times. When she
was young, the only time she could have Coke at dinner was when they were
having fish. My grandmother thought that milk would "curdle in her stomach"
if she drank it while eating fish.
Our dinner last night was salad and French onion soup. The broth was made
on Saturday of the bones and trimmings from our Christmas roast, plus a couple
big slices of shank. I used God's refrigerator overnight (the low was just
under 30, IIRC), and the fat rose to the top and pulled off quite easily.
The stock was gelled just as Gary would wish.
