I had a huge roasting pan. I say "had" because it went into the recycle bin.
I had forgotten that the reason I didn't use it was that the bottom was very
slippery and the pan would warp with heat. Once, a hot pan with roast and
veggies shot out of the oven at me and I had to catch it in mid air.

I have other baking/roasting pans. I made more veggies than usual because I
got three marked down bags of organic baby carrots and I used them all.

I did the meat in a Dutch oven on top of the stove. I could have thrown some
of the veggies in there. I have done that. I just prefer the taste of
roasted ones which is why I did them that way.
