I've never understood why someone will mention a secret
family recipe but not share it. Why mention it in the
first place if it's a secret unless they plan to market it?

If you want slighty burnt, just cook a bit longer on each side.
You could probably substitute water for the coconut milk
too if desired. It's the crispy part that wins.
