I typically buy Goya brand rice flour because it's a little cheaper than the other brand at the international foods store. For flouring things like chicken, it works nicely to first dredge with all purpose (wheat) flour, then dip in the eggs stuff, and then to use rice flour, or a mix of rice and wheat flour for the final coating. I use rice flour on everything except fish, which gets Andy's red fish breading, or a mix of Andy's and cornmeal with added black pepper.
