No, I didn't know you were talking about salmon... "fillet" is a
disambigulation, often used with several meanings but often
incorrectly, for fish/meat it's usually written with one L,
pronounced fi' lay... to me fillet is engineering nomenclature,
pronounced fil' let and the t is pronounced.

A good example of a fillet is in modern aircraft where the frames are
made of thinner aluminum for lightness but with a radious/fillet
forming internal angles for strength. For garments a fillet/doubled
material is used for the crotch area of women's panties... adds
strength where needed to delicate fabrics... new terminology for rfc's
crotch sniffers/chewers. lol
