True. Chicken breast meat has a small window between under cooked and
overcooked. Under cooked is not nice. Overcooked is tough, dry and
tasteless. Perfectly cooked is great. I like grilling boneless,
skinless chicken breasts and shop for them at one particular store
because they always carry a good supply of small breasts. I can get them
cooked through to the centre without overcooking the outsides.

Lucky for me that I like the dark meat. Being less popular, it tends to
be cheaper. It is much more resilient to cooking time. It's almost hard
to overcook chicken thighs.
