Pizza Hut uses Leprino's mozzarella; apparently Leprino's has an
exclusive deal with them. Leprino's, based in Denver, is the largest
producer of what passes for mozzarella in the US.
Another huge producer of cheese for the fast-food trade is the giant
Hilmar Cheese Co. in California. But I don't think Hilmar does a lot
of business with Pizza Hut, because of the well-publicized exclusive
deal with Leprino's. The best Hilmar cheeses, not the stuff they sell
in million-pound lots to fast-food chains, can be very good indeed.
To each his own taste, but I can't for the life of me find anything
distinctive or even pleasant in Pizza Hut's cheeses.
